- Caysan and red Jalapeño chillies are slow fermented with garlic, sugar and salt for 4-6 weeks to give the characteristic sriracha sweet and sour flavour profile.
- Following the same fermentation process as the medium sriracha with the addition of red jalapeños smoked over apple and hickory wood.
- The sauce is then cooked and balanced leaving a delicious sweet, salty, sour, spicy sauce with a smooth lingering smokiness on the palate.
Ingredients: Chilli (75%), Sugar, Vinegar, Garlic, Salt.
